I am planning a trip to Kuming, China for later this year, so in prepartation I am sampling fare from this expansive and beautiful country. Although Moo Shu is relatively fat-free, it is not taste free. Besides the crunchy and colorful vegatables make this fun to eat. You can add chicken breast, scallops or shrimp for variety. You can also nix the tortillas and add brown rice.

There are so many options!!!

Chinese Moo Shu Vegetables

1 Head of Cabbage Shredded
2 eggs or 4 egg whites
1 Carrot Shredded
1 Bunch Green onions Cut into 1 inch pieces
1 Can Mushroom Pieces, Plus any other vegetables you might like
1 tsp. Chopped Garlic
1 tsp. Grated Ginger
Teriaki Sauce to taste
Flour Tortillas
Hoisin Sauce

Scramble eggs first, set aside. Saute all the vegetables and garlic and ginger in Teriaki Sauce until wilted. After vegetables are wilted add scramblesd eggs to warm for about a minute. Spread some Hoisin sauce on tortilla and top with vegetable mixture roll and eat.

Tortillas are a low fat substitute for the pancakes usually served at Chinese Restaurants.
